Biscuits

This may not seem appropriate for a soon-after New Year's post, but I keep forgetting the details of this recipe. I probably indulged in these coconut flour biscuits too many times over the holidays, but compared to other breads/cookies/muffins, they've got to be not THAT bad.

Coconut Flour Biscuits

I've been doing the Autoimmune Protocol (AIP) for a while now and instead of eggs that are called for in this recipe I've been trying some new things. I tried bananas, which were ok- but really tasted like banana bread biscuit type things. I'm going to try pumpkin next. The Paleo Mom has a great series going on "Paleo-fying" baked goods and other things. Her Part 2 about binders is where I'm trying out some variations on the biscuit recipe. I'm also avoiding nuts and seeds due to AIP, so I can't use those options as binders, FYI.We'll see how it goes.

Since I'm also doing a semi-Whole30/semi-21 Day Sugar Detox, I'm avoiding sugars including fruits like bananas. I say semi because I've decided that on weekends I'm going to have fruit and more starchy veggies if I want to. Partly because I want to say sane and enjoy my life but also because I think AIP is SO restrictive that weekend "cheats" should be allowed. Also I'm not restricting booze, OOPS!

Anyone else in the same boat of doing a combo Whole30/AIP? As much as I want to successfully do a Whole30/eating challenge/etc. I'm ok with adjusting the rules slightly.
